TOMATO BARLEY SOUP
Here is another recipe that is quick, easy, and great to make when you are on the fly. If you like tomatoes (I even put in fresh tomatoes during the summer) and you like barley (one of my FAVORITE ingredients), this recipe is for you.
2 Quarts water
2 - 28 oz cans whole tomatoes, crushed with your hands (I use cans of crushed tomatoes and add chop up fresh tomatoes)
¼ Cup chopped parsley
2 large onions, chopped
5 cloves garlic, chopped (have I mentioned I love garlic)
¼ Cup olive oil
¼ Tsp dried dill weed
¼ Tsp dried basil
½ pound Barley
Salt to taste
1 Tsp black pepper
Bring the water to a boil in a large covered pot. Add the remaining ingredients and cook uncovered over medium heat, stirring frequently, for 1¼ hours or until the barley is soft and the soup is thick. Taste for seasoning.
Serve with Italian bread and make a meal. Serves 6
